Kamal’s Mixed Vegetables
Tender vegetables, fragrant panch phoron, and a finishing spoon of ghee. A simple dish full of homestyle warmth.

How to make it
Take your time. Follow the steps, one at a time.
Wash all the vegetables thoroughly and drain them well.
Cut the vegetables into small, even-sized pieces.
Heat some mustard oil in a kadhai (wok).
Once the oil is hot, add panch phoron (five-spice mix) and whole dry red chillies. Let them splutter and release their aroma.
Add all the chopped vegetables and mix well.
Add a little turmeric (haldi) and salt soon after adding the vegetables.
Stir-fry for a few minutes, then cover the kadhai and allow the vegetables to cook gently.
When the vegetables are about 50% cooked, add chopped tomatoes and ginger.
Mix well and continue cooking until the vegetables are tender and nicely cooked.
Just before taking the vegetables off the heat, add one teaspoon of ghee, mix gently, and serve.
